Egg Muffin Recipe

This recipe is great for all of on the go individuals who usually do not even have time to eat a good breakfast.  They are also portable enough to pack in your lunch box.  This should make approximately 12 muffins.

Ingredients:

8 organic eggs, beaten

1/4 cup coconut oil (melted, not in the microwave)

shredded cheese

4-5 slices of cooked bacon

various chopped vegetables (I like zucchini and onions)

muffin tin

Directions:

Preheat the oven to 375 degrees.  Use butter or coconut oil to grease the muffin tin.  I recently started using silicone muffin liners–which are AMAZING!!  Nothing sticks to them:)  Add some bacon, (or ham, sausage, whatever particularly protein you like), chopped vegetables to each of the muffin tins.  Then pour equal amounts of the eggs into each muffin tin.  Add some shredded cheese to each muffin tin.  Put the muffin tins in the preheated oven for approximately 18 minutes (everybody’s oven is different, so monitor after 15 minutes).  Yum, enjoy!
